The project aims to develop an innovative technology that integrates cold pasteurization using supercritical CO2 directly into Orved packaging machines. The goal is to create a compact system capable of packaging and stabilizing fresh foods in a single operational cycle, improving safety, quality, and shelf life. Compared to existing non-thermal technologies, the solution focuses on miniaturization and accessibility for professional and artisanal sectors. The project combines expertise in engineering, materials science, and food technology to optimize both process and packaging. Main activities include hardware design, prototyping, testing on target food matrices, and microbiological validation. The approach also contributes to reducing environmental impact and supports sustainable production models. Expected outcomes include a functional prototype and validated process parameters for industrial application.
